The story

A five-course Cape seafood experience cooked by a private chef at your villa — linefish from the cold Benguela current, cooked over wood coals and in the pan, from a published per-person price with a four-guest minimum.

The Cape eats from two oceans, and the menu follows the boats. Snoek — the traditional Cape working fish — runs inshore from November to April, with a winter run from May, and it is classically braaied under an apricot-jam glaze. Yellowtail, Cape salmon, red roman and hottentot fill the calendar around it.

The West Coast supplies the cold-water delicacies, and the winter snoek run is its own season: when the fish move, the menu moves. This is a journey with a map drawn by the catch, not by a freezer.

Sourcing is through licensed fishmongers and commercial suppliers we name on the quote. Linefish is bought on the morning of your dinner; if the boats didn't land what the menu wanted, you hear about the substitution before we shop, not at the table.

The kreef rule, in writing

Kreef — West Coast rock lobster — appears on this menu only in the licensed, gazetted season, and only from licensed commercial suppliers. Never out of season, never recreational catch: recreationally caught lobster may not be sold in South Africa, so it never touches our menus.

The season windows are gazetted annually and short. When kreef is on, your quote says so and names the source. When it is off, no amount of asking changes the answer.

The same discipline runs through the rest of the menu: linefish is bought against the day's landings, and stocks under pressure are simply not served. Sustainability here is a purchasing rule, not a paragraph.

The menu, course by course

Five courses following the catch. The snoek course is the constant; the rest moves with the season.

  1. 01West Coast oysters or mussels — dressed simply, when the beds allow
  2. 02Cape linefish crudo — yellowtail when it's running, citrus, cold-pressed oil
  3. 03Snoek on the coals — apricot glaze, lemon butter, char and smoke
  4. 04Kreef — in the licensed gazetted season only, grilled over coals, lemon butter
  5. 05Malva or milk tart — because dessert at the Cape is not negotiable

Practical, in one card

Five courses from a published per-person price, minimum four guests, about three hours. The classic attach is a Constantia Sauvignon Blanc flight — cool-climate white against smoke and shellfish — hosted by a sommelier.

The seasons, honestly

Snoek: inshore season November to April, winter run May to October. Yellowtail and game fish favour the summer half. Winter bottom fishing brings hottentot and red roman. Kreef obeys the gazette — short windows, announced annually, sourced commercially under licence.

Our journal's Cape seafood seasons guide tracks the calendar in detail and is refreshed when the season dates change. If a course you want is out of season, we'll tell you what is at its best instead — that trade is the point of the journey.

Cooking is split between fire and pan. The snoek and, in season, the kreef go over wood coals — smoke against the apricot glaze is non-negotiable — while the crudo and the oysters stay raw and cold. Your villa needs nothing more than a standard kitchen and a patch of level ground for the grid.

Halaal-friendly service follows the same strict protocols as the rest of the site, with dedicated equipment and separate prep on request. And if the snoek course converts you, the braai mastery cooking class teaches the glaze timing yourself.
