Pairing, productised

Wine pairing and sommelier services for private dinners, tasting menus and villa stays across Cape Town and the Winelands: a per-person pairing add-on, hosted villa tastings, and cellar consults for longer stays. Every product carries a published price or a defined quoting process.

Nobody else in this market publishes a rate card for sommelier work. Prices sit behind phone calls, and the service blurs into 'we can arrange wine'. We would rather show the number and let the product speak.

Who books this: dinner hosts who want the wine to carry its half of the evening, Winelands visitors staying in villas, and households stocking a cellar for a long stay. Each maps to one of the three products below.

Three products, published

The pairing add-on matches small Cape producers to any dinner or tasting menu, poured and introduced course by course. The sommelier-hosted villa tasting brings six wines and ninety minutes of guided tasting to your terrace.

The third product is the Cellar & Consult: villa cellar stocking, estate sourcing and a drinking plan for a long stay. It is scoped per cellar and quoted after a walkthrough — a cellar of two hundred bottles is not the same job as a wine fridge of twenty.

All three attach to any dinner, tasting menu, chef's table or villa stay we already cook. The pairing is per person; the tasting is per event; the consult is per cellar.

Small producers over big labels

The philosophy is simple: Constantia Sauvignon, Swartland Chenin, Pinotage taken seriously, and MCC when there is something to celebrate. Small producers first, because the Cape's best value and best stories live there.

Our wine pairing guide walks through South African regions and styles for private dining — what to pour with snoek, why Chenin carries a Cape Malay table, and when Pinotage earns its place. It is the briefing document we use ourselves.

We are not loyal to any estate. No allocations to push, no sponsorships to serve. The pairing that lands on your table is the one the menu asked for, bought where it is best value.

The compliance line, stated plainly

You buy the wine. We advise, source on request at your instruction, and pour. We are not a bar service and we make no claims to be one — the wine line on your invoice is what the wine cost, and nothing more.

This keeps the incentives clean. We have no margin in selling you a more expensive bottle, so the pairing advice is only ever about what the food needs.

A pairing calendar

Winter, June to August, is red season: Swartland Syrah and Bordeaux-style blends beside braai-under-cover and slow bredies. It is also when our winter rates apply to villa stays.

Harvest, February to April, is the time for vineyard dinners in Stellenbosch and Franschhoek — the vines are heavy and the estates are working. Ke Dezemba calls for MCC at sunset and crisp Chenin with seafood. The calendar shapes our pairing lists all year.

Season matters to the kitchen as much as the cellar, which is why pairing is designed against the actual menu for your date, not a standing list. A winter pairing and a harvest pairing for the same five courses will share almost no bottles.
