The story
A seven-course tasting menu built from the indigenous ingredients of the Cape Floral Kingdom, cooked by a private chef in your villa or home. From a published per-person price, minimum four guests, about three and a half hours at the table.
The Cape Floristic Region is the smallest of the world's six floral kingdoms and, for its size, the richest. Its pantry reads like a forager's notebook: rooibos and honeybush, buchu with its blackcurrant edge, wild rosemary, wild garlic, imphepho, and the waterblommetjie — the Cape water flower that peaks in September and anchors a bredie like nothing else.
Cape Town's fine-dining scene proved this territory at the highest level — tasting menus threaded with fynbos ingredients have carried the city's name onto the world's best-restaurant lists. We claim no affiliation with those kitchens; we simply bring the same ingredient territory to your villa table, with the story told as each course lands.
The menu rotates with the veld. What follows is the spring arc — the season when the kingdom flowers.
Each course lands with a margin note from the chef: where the plant grows, what it tastes like, and why it's on the plate. Rooibos brings tannin and warmth, buchu a blackcurrant sharpness, imphepho a camphor-sweet smoke. This is a geography lesson you eat.
The menu, course by course
Seven courses, four of them drawn directly from the kingdom. The R&D notes travel with the menu — your chef walks you through what changed and why.
- 01Wild garlic and culture bread — whipped buchu butter, smoked salt
- 02Cape linefish crudo — kei apple, wild fennel, cold-pressed oil
- 03Waterblommetjies — the September flower, preserved lemon, lamb fat
- 04Rooibos-smoked duck — honeybush glaze, charred citrus
- 05Karoo lamb — wild rosemary, morogo greens, pan juices
- 06Imphepho and honey — burnt honey ice cream, veld flowers
- 07Buchu and stone fruit — the blackcurrant leaf over macerated plums
Practical, in one card

The season runs the menu
The seasonality strip peaks September to November: waterblommetjies flower in September, wild herbs run through spring, and stone fruit carries the desserts from December. Autumn and winter shift the arc toward bredies, roots and smoke.
Some ingredients are foraged under permit and some come from specialist growers; availability sets the menu, never the reverse. If the waterblommetjies aren't in season, the menu says what replaced them — that's the deal with an honest tasting menu.
The Cape Floral Kingdom is a protected, fire-adapted biome, and we treat it that way: foraged quantities stay small, growers get named on the menu, and nothing endangered touches a plate. Provenance is the point of the experience, so we don't blur it.
Dietary and pacing
Vegetarian and vegan arcs run parallel to the standard menu — the kingdom is a plant pantry, so the substitutions are upgrades, not omissions. Gluten-free and allergy-aware versions are settled in the menu consult.
Pacing is yours. Courses land roughly every twenty-five minutes, and the table sets the tempo. The journal's fynbos ingredients guide goes deeper on each plant if you want the reading list first.
The format suits four to twelve guests. Below four the economics stop being honest; above twelve it becomes an event and we quote it that way. Fine-dining guests comparing formats should look at our fine dining at home page — this page is the story of one named menu.
